Arriving in Barbados calls for an outfit that’s equal parts breezy, polished, and ready for the resort life, and this look was exactly that. I slipped into my bright pink beach sweater from J.Crew Factory, which feels soft and airy but adds that punch of color that instantly says “vacation mode.” Paired with relaxed white linen pants, it was the perfect combination of breathable fabrics and laid-back elegance. The wide-leg silhouette kept me cool in the warm island air while still feeling pulled together enough for my first stop: the bar at Cobblers Cove.

Of course, a trip to Cobblers Cove wouldn’t be complete without indulging in their rum-based creations. The island’s signature spirit is the star here, often paired with tropical fruit juices for something both refreshing and potent. If you’re looking to bring a taste of Barbados home this summer, here are three of my favorite rum cocktails to try:

  1. Bajan Rum Punch – This is national cocktail of Barbados and they even have a rhyme to go with. “One of sour, two of sweet, three of strong and four of weak – a dash of bitters and a sprinkle of spice, serve well chilled with plenty of ice”.
Gold rum, fresh lemon juice, agave, aromatic bitters, freshly grated nutmeg
  2. Cobblers Cooler – This was my favorite drink during the trip. I’m such a fan of watermelon, it’s so refreshing during the summer.
Gold rum, watermelon chunks, banana, pineapple, agave
  3. Cloverita – A deep, rich cocktail made with dark rum, orange juice, pineapple juice, grenadine, and a splash of lime. Perfect for slow sipping on a hot afternoon.
Tequila, cucumber, fresh lime juice, agave

Whether you’re boarding a plane to the Caribbean or mixing a drink in your backyard, this outfit-and-cocktail combo brings a little bit of island charm to wherever you are. Comfort, style, and a glass full of sunshine, it’s the ultimate summer mood. Want to make these drinks for yourself? Consider ordering High Spirits, the official cocktail book for Cobblers Cove.
